Green cake ??? Why not! This nettle flour-based pie looks somewhat unusual, however the flavour fits into our world-order without further ado. It has a slightly green tea taste, that fits well with the sour cherry.
Nettle (Urtica dioica L.) flour is actually the dried nettle leaf grist, but to achieve the neutral taste, it should be blanched or cooked before drying. Nettle flour meets the criteria in most modern diets. In addition to that, its nutritional profil is excellent too.
Ingredients
- 100 g butter
- 2 eggs
- 150 grams of sugar or sugar-alternative
- 20 ml milk or vegetable milk
- 250 g nettle flour
- half a packet (3.5 g) baking powder
- 1 kg of pitted sour cherries
- 100 grams of walnuts
Preparation
- Preheat the oven to 180 ° C.
- Mix the butter, the sugar and the eggs.
- Add the milk, the nettle flour, and the baking powder, mix them lump-free.
- Pour it into a silicone bakeware or a buttered, floured baking dish.
- Sprinkle the sour cherries and walnuts. If the cherries are spread with flour before adding, they will not sink to the bottom of the baking dish.
- Bake at 180ºC until ready (about 30 minutes).
- Leave to cool, then sprinkle powdered sugar on the top.
